Xató is a salad made with endives, salted cod, salted tuna, seitans and Arbequina olives. The dish has become so famous over the years that the town of Sitges dedicates an entire week to it! It is traditionally accompanied by a sauce made from garlic, almonds, hazelnuts, seitons, boiled nyoris, sweet fried bread, chili, oil, vinegar and salt.
In Sitges, xató goes hand in hand with Carnival, and it is typical to eat it on both Maundy Thursday and Ash Wednesday, though you’ll be able to find it on the menu all week long at various restaurants in town.
