Festa de l'escudella de Castellterçol
Some think this festival was started in the sixteenth century, maybe to recharge before the fasting of Lent—but no one is sure for certain! What we do know is that all the soups on offer are delicious and that a hot dish offered to foreigners who came for Carnival.
Many towns and villages throughout Catalunya celebrate the beginning of the Carnival season with this typical Catalan meal. The escudellaires are put to work at seven in the morning with the first ingredients: salt, oil and butter, followed by the meat: beef, lean rib, botifarra and chicken. And, just twenty minutes before serving the soup, rice and noodles are added as the smell spreads throughout the village!
