Recipe: Almond & Date Energy Balls

Energy Balls

At this time of the year, with the seemingly endless errands to run before the festivities we could all use some extra energy. These vegan treats are also gluten-free, so you can indulge your sweet tooth without neglecting your diet and you'll get a healthy energy boost to get you through the holiday season.

METHOD

  1. Place the almonds or nuts of your choice in a food processor and process until it has a flour-like texture (about one to two minutes).
  2. With the food processor on low, gradually add the pitted dates, banana, ground flax seeds and chia seeds until everything is well mixed. The mixture should have a soft and sticky consistency that allows you to manipulate it with your hands.
  3. Take a spoonful of the mixture and shape into a ball with your hands.
  4. Dip the balls in a bowl with the grated coconut and/or sesame seeds and carefully roll to coat them completely.
  5. Let them rest in the freezer for a couple of hours before serving. They can be stored in the fridge or freezer for about four days. Makes about 15 balls.
