Recipe: Watermelon Gazpacho

Beat the heat with this refreshing and aromatic version of the Andalusian favorite.

INGREDIENTS


METHOD

  1. Wash the tomatoes then peel and cut into chunks.
  2. Peel and chop the onion and pepper.
  3. Chop the watermelon.
  4. Put all the ingredients in a large bowl, add the dry bread, mint leaves, garlic cloves and blend together. Add salt and pepper to taste.
  5. Add the olive oil and vinegar and strain the mixture through a strainer. If it is too thick, add water until you get the desired texture. 
  6. Serve the gazpacho chilled and garnish with mint leaves.
