Recipe: Chocolate cupcakes
Ingredients
For the cupcakes:
100g plain flour
20g cocoa powder
140g caster sugar
1½tsp baking powder
a pinch of salt
40g unsalted butter,
at room temperature
120ml whole milk
1 egg
¼tsp vanilla extract
For the chocolate frosting:
300g icing sugar, sifted
100g unsalted butter at room temperature
40g cocoa powder, sifted
40ml whole milk
Method
Preheat the oven to 170°C. Line a 12 hole cupcake tin with paper cupcake cases. Put the flour, cocoa powder, sugar, baking powder, salt and butter in a bowl. Using an electric whisk, mix together at a slow speed until the mixture is like breadcrumbs.
Whisk the milk, egg and vanilla extract together in a jug, pour half into the flour mixture and mix well. Pour the remainder into the bowl and mix well.
Spoon the mixture into the paper cases until two-thirds full and bake in the oven for 25 minutes. Once cooked, take the cupcakes out of the oven and leave to cool on a wire rack.
To make the frosting, beat the icing sugar, butter and cocoa powder together using an electric whisk until well mixed. Add the milk to the butter mixture and turn the mixer up to high speed. Continue beating until the frosting is light and fluffy.
