Parés Baltà Ros de Pacs - Organic Rosé
Parés Baltà is one of the oldest standing wineries in the Penedès, around since 1790, and occupying some of the most spectacular scenery in the area. High ridges of pine, shallow river valleys and ancient terraces all contribute to the quality of grapes grown across over 200 hectares resulting in a remarkably varied portfolio of wines. The winery has been certified organic since 2004.
The Ros de Pacs is a bargain at €3.95, a nicely minerally rosé made of Merlot and Cabernet Sauvignon, which gives its characteristic cherry red colour. Compared to the pinks of Navarra say, this is almost red with distinctive summer berry flavours: cherries, raspberries, strawberries all feature without being too acidic. There are some mellowing creamy textures to it too. It is a lovely wine just for drinking all on its own, but I like it also with grilled lamb chops, or say a Thai beef salad. It stands up to spices nicely.
