Ginger and pineapple mojito
This excellent twist on the ubiquitous mojito comes from Portuguese mixologist Francisco Rebelo, who mans the bar at the W Hotel’s Wet Deck (open from 8pm for non guests).
The hotel has become famous for its fresh and innovative cocktails and Rebelo’s summery ginger-pineapple mojito is no exception. It tastes almost as good made at home and makes a great aperitif before a barbecue or picnic.
50 ml pineapple juice
3-4 slices fresh ginger
4-5 fresh mint leaves
3-4 chunks fresh lime
50 ml white rum
1 tbsp white sugar
HOW TO MIX
- Muddle the ginger, lime, mint leaves and sugar together in a large glass by pounding with a wooden pestle. Do this well to release the aromas from all ingredients.
- Fill the glass with ice and pour over the pineapple juice followed by the rum.
- Top up with soda water and stir gently with a long spoon so as not to loose the bubbles.
- Decorate with a wedge of pineapple and a sprig of mint.
